I made a carrot cake for my neighbor yesterday using my favorite recipe. It was someone's birthday and their oven wasn't working. I could really relate! I can use my side oven as long as I cook only one layer at a time. It made me want one too so I decided to make it again for my own family. It was a big hit! I though I'd share it with you.
2c flour
2 tsp baking soda
1/4 tsp salt
2 tsp ground cinnamon
1/8 tsp ground nutmeg
1 1/2 c sugar
1 (8oz) package sour cream
1/2 cup vegetable oil
4 eggs
1 1/2 tsp vanilla
2 1/2 shredded carrots
1 c chopped walnuts
1/2 c raisins
Frosting:
1 (8oz) package cream cheese (softened)
1/2 c butter (softened)
1 16oz package powdered sugar, sifted
1 tsp vanilla
1/3 c flaked coconut
13 c finely shredded carrots
Mix wet and dry ingredients separately. Add together and mix till blended. Pour into two greased and floured 9-inch cake pans and bake at 350 degrees for 25-30 minutes. Cool.
Frosting: Beat cream cheese and butter till smooth. Gradually add powdered sugar, beating untill well blended. Stir in 1 tsp vanilla. Spread frosting between layers and on top and sites. Combine coconut and 1/3 c shredded carrot, sprinkly on top of cake.

Yesterday we made an ancient spice cake recipe. It was handed down from great grandma who use to make it in a wood stove! Needless to say, we updated it a bit. And I will try your carrot cake! It looks YUMMY[SMILE]

Everybody seems to love it! I like to use part whole wheat flour for my family, and sometimes some drained pineapple. Feels more like a meal than a cake![HEART]

Ohhh.... I love carrot cake. It not only tastes so good, but it smells so good when it is baking. I will have to leave off the coconut as my Hubby doesn't like it. Maybe, I will make it with coconut on just one side and then we will both be happy. Thanks for sharing the recipe. (((Hugs))) Annie :o)[HEART][HEART]

Actually, I usually leave the coconut off too! I also play around with this recipe in other ways. Seems like you can't ruin it no matter what you do.[SMILE]ENJOY!
