MrsStu asked for easy recipes, so I decided to share this one.  It's so easy, and my family loves it!

TACO CASSEROLE (or whatever you would like to call it)

(this is a close approximation to what it will look like)

1 lb ground beef (may add chopped onions, olives, or bell peppers if desired)

1 package taco seasoning

1 bag tortilla chips

large container of cottage cheese

1 can chili with beans

shredded cheese

sour cream

 

Preheat oven to 350

Brown your hamburger in a skillet.  Add taco seasoning and a bit of water.  Simmer till almost all the water has evaporated.  Add canned chili and cook till the added chili is hot.

In a casserol dish, layer hamburger mixture with tortillas and cottage cheese until you run out...about 2-4 layers.

Top with shredded cheese.

Bake till cheese is melted.  Serve with a dollop of sour cream.

    Oooh I LOVE easy breezy recipes like this and I'm sure it's tasty... but it's way too hot to turn the oven today so I'll have to print it out for a cooler day. Thanks!!! [SMILE][THUMBUP]

    I understand. On hot days I often just make the meat mixture and make taco salad with the chips, tomatoes, some lettuce, and cheese. YUM![THUMBUP][HEART]
